Cabardès is the meeting point of two distinct climates: the cool atlantic from the west, and warm mediterrenean from the east. Our wines are a unique blend of grapes combining both climates; the atlantic cabernet-sauvignon, and the mediterranean syrah and grenache. For this reason, our grapes, grown at an altitude of 300 meters on the clay and chalk southern slopes of the «Montagne Noire» (Black Mountain) produce a unique wine that you will not find in any other region of France.

the grape picking

The grapes are picked by hand between the 1st and 25th October

the wine-making

For this wine, only the very best grapes on the domaine are used. After removing the stalks, the grapes are put into vats for about three weeks. During this time, the juices are extracted and re-pumped back into the cuve to "work" the grapes. Once the alcoholic and malo-lactic fermentation are finished, the wine is finally extracted and put in another vat. The blending of different "cépages" (types of grape) starts about 10 months after the harvest. This blend is then put into oak casks (600 liters) for a duration of two years.

the tasting

This wine, composed with great patience, is always extremely concentrated. Complex aromas of grilled almonds, plums, vanilla and laurel, amongst others. The taste does not disappoint, finesse and elegance in a lingering finale.

the keeping

After resting so long in oak casks, this wine may be drunk only a few months after bottling, but can be kept for much longer.
