The Cabrol estate is full of plants typical of the Languedoc scrubland, including a superb field of wild thyme located just at the entrance to the estate. This hosts around thirty hives in May and June when this thyme is in flower. It is a honey full of finesse and complexity, onctuous but not too sweet, mixing thyme perfumes with those of dozens of small flowers of garrigue. Thyme honey is known for its antiseptic, antibacterial and healing properties. It helps strengthening the immune system and fighting against respiratory infections in winter.
